Haystack cookies: hay inspired fun!'s hay!  Love wordplay, and love visiting my dad's farm!  Climbing on hay bales is a fond childhood memory for me, and my kids love it too!  Forget the stair climber at the gym - go climb a hay bale for some exercise!  And, after you burn the calories from climbing one, make these hay inspired treats:  haystack cookies. 

Haystack cookies

5 ounces almond bark
1/4 cup creamy peanut butter
2/3 cup butterscotch chips
2 cups miniature marshmallows
4 ounces of chow mein noodles

Melt almond bark & butterscotch chips in microwave,
stirring every 30 seconds until creamy and smooth.
Stir in peanut butter.
Stir in marshmallows and noodles,
then spoon onto waxed paper or
aluminum foil to harden.

It's so hard to wait for the haystack cookies to harden -
so why wait?
Just grab a spoon and a cup of strong coffee!

My mom used to make these cookies for us with
just almond bark and chow mein noodles. 
I like it that way best too, but I also throw
in the 1/4 cup of peanut butter:

My kids love visiting Grandpa's farm
and seeing all the hay stacked up. 
I appreciate the fact that my kids get to learn
about the farming process start to finish. 
They get to bond with family and see the 
complexities, and the simplicities, of 
life on the farm.
