Graham cracker M&M sandwich treats

Today is a double-espresso kind of day.  Two of my guys have birthdays this week, and with school starting last week, I'm one tired gal.  I made a double-batch of cream cheese frosting for their cakes...and of course made enough extra for one of my favorite treats:  graham cracker M&M sandwiches.  I love, love, love these treats with a cup of strong coffee, or a cold glass of milk.

I remember my mom making these frosted graham cracker sandwiches, and I love making them with my kids.  I like them with chocolate fudge frosting (click here for fudge frosting recipe), and with cream cheese frosting.  Throw in some M&M's, and you have one rockin' snack!

Graham cracker M&M sandwich treats:

I whip up some cream cheese frosting,
spread it extra thick on graham crackers,
press the crackers together, and dip them in M&M's. 
I like to wrap them individually
in foil and refrigerate them.

Cream cheese frosting
beat together the following:
1 (8 ounce) pkg. cream cheese
1 (16 ounce) bag of powdered sugar
1 teaspoon vanilla or almond extract (almond is the best!)
whipping cream (add to get the consistency you like)
