Chocolate Chip Banana Bread

I'm bananas over this banana bread!  What's not to like about banana bread with chocolate chips?  You could leave out the chips, but why?

Chocolate Chip Banana Bread

1 cup sugar
1/2 cup shortening (or one stick of butter)
2 eggs
2 teaspoons vanilla
3 mashed bananas
2 cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 cup semisweet chocolate chips
*I double this recipe every time so I can have two loaves of bread instead of one!

Combine sugar and shortening in mixing bowl.  Beat in eggs, vanilla, and bananas until well blended.  Combine flour, soda, and salt in separate bowl, and stir into mixing bowl until well combined.  Stir in chocolate chips, and spoon into loaf pan.  Bake for 60 minutes in a 350 degree oven.

I throw all our too-ripe bananas in the freezer to save for banana bread.  I let them thaw for 30 minutes, then squeeze them right into the mixing bowl.  Easy and quick, which is good because messing with mushy bananas is not my favorite thing to do!


Can't wait to have a warm slice of banana bread with a cup of coffee!
