Strawberry Cream Cheese Pie

Strawberry cream cheese pie - oh my!  Our family's version of strawberry cheesecake, with chocolate dipped strawberries on top.  This pie never lasts more than one day around our house - yummy!

Strawberry Cream Cheese Pie

1 (8 ounce) box cream cheese, softened
1 cup powdered sugar
1 (8 ounce) container whipped topping
1 tsp. vanilla or almond extract (we love almond)
1 graham cracker pie crust
four cups chopped fresh strawberries

Blend cream cheese, powdered sugar, and extract together.  Stir in whipped topping, and pour into pie crust.  Add four cups of chopped fresh strawberries and blend well.
Freeze or refrigerate for four hours.  We eat ours frozen because we love the ice cream consistency.

My boys love to help me make the homemade graham cracker crust.
They pound one sleeve of graham crackers in a plastic bag while I melt 1/3 cup of butter in the microwave.  We stir the melted butter, graham cracker crumbs, and 1/3 cup of sugar together.  After that we press the crust into a pie pan and freeze for 20 minutes.
