Bran Muffins

My kids love these easy bran muffins, and I love it that they love something healthy! 


Bran Muffins

3 cups flour
1 cup sugar
2 tablespoon baking powder
2 tsps. salt
3 cups bran cereal (I used Trader Joe's)
2 cups milk
2 eggs
2/3 cup oil or shortening (I use oil)


Stir together flour, sugar, baking powder, and salt.  Set aside.  In a mixing bowl combine cereal and milk.  Let sit five minutes.  Add egg and oil.  Mix well, then dump in dry ingredients.  Beat well.  Makes 24 muffins.  Bake for 15-20 minutes at 400 degrees.
