Chocolate Chip Pumpkin Cookies

Chilly breeze outside today, so it's baking time for us!  I found the recipes for these chocolate chip pumpkin cookies online a few years ago, and love to make them this time of year.  Anything pumpkin tastes good in November...and baking cookies is sooo much more fun than cleaning out the closets I'm avoiding!

Chocolate Chip Pumpkin Cookies

  • 1 1/2 cups butter, softened
  • 2 cups packed brown sugar
  • 1 cup sugar
  • 1 (15 ounce) can pumpkin
  • 1 egg
  • 1 teaspoon vanilla
  • 4 cups all-purpose flour
  • 2 cups quick-cooking oats
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1 teaspoon salt
  • 2 cups semisweet chocolate chips
Cream butter and sugars. Beat in the pumpkin, egg and vanilla. Combine the flour, oats, baking soda, cinnamon and salt; gradually add to creamed mixture. Stir in chocolate chips. Bake at 350 degrees for 10-12 minutes or until lightly browned.
