Cat in the Hat hat cookies - Dr. Seuss birthday

Happy birthday Dr. Seuss! 

We're celebrating with Cat in the Hat hat cookies...

One of my sons shares a birthday with Dr. Seuss, so we make these every year on March 2.  I heard about this idea several years ago when I was an English teacher...long before there was easy web surfing. 



How to make 'em: 
Dip ritz crackers in melted almond bark.
Dip the bottoms of red & white lifesavers in almond bark, and start stacking the lifesavers. 
*We've also used the white chocolate dipped oreos instead of ritz crackers, and gummy lifesavers.


Served up on our family birthday plates!
